The difference between a Sub-Zero 500 and a 600 is what sits behind the grille. The 500 Series, built from 1987 into the late 1990s, is mechanical: a dial and a thermostat, no board, no error codes. The 600 Series, from 1996 to 2009, added a control board, thermistors and EC codes, and the BI line arrived alongside it in the mid-2000s on that same electronic architecture with the deepest parts support of the three.
Sub-Zero kept all three to roughly the same 84-inch envelope, so a Los Altos kitchen finished in 1989 and one finished in 2019 can look identical and be entirely different machines. That gap matters along the Foothill corridor, where custom kitchens from the 1980s and 1990s still hold a dense pocket of mechanical-era units. Identification takes two glances and no tools. Look at the temperature control behind the upper door: a numbered mechanical dial on a 1-to-10 scale means a mechanical-era unit, a small display that can throw an EC code means the electronic generation, and a flush touch readout means the newest built-in line.
The rating plate settles it. It hides behind the upper grille or inside the fresh-food compartment near the ceiling, and its model number carries the answer: three digits alone, such as 532, 550, 561 or 590, mean the mechanical era; three digits in the 600 family, such as 632, 650 or 685, mean the electronic one; a BI prefix, as on BI-36S or BI-42SD, names the current architecture.
Door style is the tiebreaker when a plate is unreadable. Older combination units in Old Los Altos and Loyola Corners are usually over-and-under, while side-by-side and column formats dominate the newer two generations.
What actually changed under the cabinet since 1987?
Three things separate the generations: the controls, the refrigerant, and how much the machine tells you. On a mechanical cabinet, temperature comes off a thermostat and a dial, and diagnosis is done with gauges and hands on the tubing, which is why a 39-year-old unit in a Woodland Acres kitchen is still serviceable.
The 600 added electronics: thermistors instead of a mechanical bulb, magnetic door switches, adaptive defrost, and a display that raises an EC code when a reading falls outside its window. That code narrows the search to one subsystem but never delivers a verdict, because a drifted sensor can point a technician at a healthy part.
What did not change is the trait that matters most to an owner here: dual refrigeration. Combination models across all three run two independent sealed systems behind one facade, so one compartment can fail while the other holds temperature, and a dead compartment is a repair question rather than a whole-cabinet verdict.
Does the refrigerant era decide whether a fix is worth it?
Refrigerant vintage is a service consideration, not a death sentence. Most cabinets built before the mid-1990s were charged with R-12, though the changeover ran model by model, so only the rating plate settles it on a given unit. United States production and import of new CFC-12 ended on December 31, 1995 under the Montreal Protocol. Servicing that gas stayed legal and reclaimed supply is still traded, so a system holding its charge needs nothing.
A leak is where the era starts costing money. Moving an old cabinet onto R-134a is a sealed-system rebuild, not a gas swap: recover the charge, repair the leak, change the mineral oil for a compatible synthetic, fit a new filter-drier, deep-vacuum, then recharge by weight. What does each generation cost to keep alive in Los Altos?

Will a new BI drop into an old cutout?
Cabinetry is the hidden cost in every replacement quote. Sub-Zero has kept its envelope stable, roughly 84 inches tall and 24 inches deep in 30, 36, 42 and 48-inch widths, so a current unit usually lands in the hole an older one vacated.
Usually is not always. Grille heights, hinge geometry and panel dimensions all moved, so custom wood fronts almost never transfer, and a 1990s over-and-under swapped for a side-by-side changes which way the doors open and where the water line arrives. Ask what a replacement needs from the opening, not only what it costs on the showroom floor. A gasket job in the $325-$950 band that restores a good seal on a 632, and a new appliance plus fresh millwork, are answers to the same complaint.
When does replacement become the honest answer?
Replacement wins in three situations, and pretending otherwise would be dishonest. First, a failed sealed system on an end-of-life mechanical cabinet: when a 39-year-old unit needs a compressor and its second system shows the same wear, $1,800-$4,800 on half an aging machine is a poor trade. Second, unobtainable parts: some discontinued boards and cosmetic assemblies cannot be sourced. Third, a real remodel, where the cabinetry is opening anyway.
Everything else usually favors the repair. A single failed component on a cabinet whose other system is healthy, a gasket, a fan, a board, an ice maker, is a one-part fix on a box overbuilt to outlive it, whether the plate reads 550 or BI-36U.
